If you’re playing in survival mode there are really three different ways you can get a saddle.

1. Find a chest in a Dungeon
This will likely be the most common way for players to find themselves a saddle in Minecraft.
First, you need to find yourself a dungeon located underground.
Dungeons will typically have a moster that spawns in the middle, so you need to be aware of your surroundings.
On the upside, a dungeon should have 1 or 2 chests that are filled with valuable items.
Thinking luck is on your side you should hopefully find yourself a saddle. All you need to do is drag it from the chest into your inventory.
2. Find a chest in the Nether Fortress
Whilst you can get a saddle from analyzing the Nether Realm, it’s still no easy task.
In order to transport to the Nether Realm, you will first need to build a Nether portal.
Once you cross over, look around inside the fortress and hold an eye out for chests.
Assuming you occur across one, you can get yourself some high-value items, however, whilst it’s possible you could get a saddle, it’s by no means guaranteed.
3. Go Fishing for Saddles
This is by no means a lock, but it is possible to catch a saddle whilst fishing.
